This is what I would classify as a healthy cocktail – very low sugar (optional raw honey) and packed with fresh, nutritious citrus and natural flavour. There’s just the small matter of the booze.
A great match for this spicy Thai green curry.

Thai basil and citrus cocktail
A fresh, zingy cocktail packed with fresh citrus juices and fragrant Thai basil, with a touch of raw honey and delicious gin.

Ingredients
Thai basil and citrus cocktail
- 1 lightly heaped tsp raw honey (optional)
- 1 lemon
- 1 lime
- 40 ml gin or tequila
- 10 Thai basil leaves
- gold leaf
Instructions
for the cocktails
- Dissolve the honey in a couple of tablespoons of warm water. Zest a few scrapes of lemon and lime over 2 martini glasses.
- Juice and strain the lemon and lime and add the juices to a cocktail shaker. Add the honey water, alcohol and Thai basil leaves, then shake with ice until the shaker is frosted. Strain into the martini glasses and top with a few flakes of edible gold.
