Salt, sour, heat, umami and sweet – how to make vegetarian food taste amazing. Do you think about this balance when you cook?

It made a huge difference to my cooking when I learnt how to really taste all the layers in a dish and adjust them as it felt necessary. My cooking is not evenly balanced, though, it’s more sour and umami, less sweet, because this is my taste.
