Healthy whole grain crackers

By Nancy Anne Harbord

Instagram

This healthy cracker recipe is great for dipping and scooping all kinds of yummy treats.

Made with only two ingredients, whole grain spelt flour and herby za’atar.

Add 200g flour to a food processor with a good pinch of flaky salt. With the machine running, add enough boiling water (about 80g) to form a supple dough that’s not sticky. Knead for 1-2 minutes until smooth, soft and a little shiny. Cover and rest for 10 minutes, then roll out with a rolling pin or run through a pasta machine (one of my favourite kitchen tools!) for super thin, speedy crackers. Brush with water, sprinkle with za’atar and bake at 180℃ for 10-15 minutes, until crunchy and completely dried out.
