Are you a fan of Yorkshire puddings? How do you like them? I secretly like mine stodgy.

I have literally eaten an entire plate of Yorkshire puddings for dinner before. Once or twice…

I read on Serious Eats that resting the batter overnight really improves Yorkshire pudding (lighter, more flavourful, better lift) and I can confirm that it indeed does!

Airy and crisp, they rise dramatically and are delicately creamy inside.
