Sourdough sandwiched with mustard, melty Gruyère and halloumi ‘bacon’, topped with a deeply cheesy béchamel and grilled until bubbly.

My recipe at Great British Chefs (swap the bacon for halloumi ‘bacon’ – one of the most delicious things you can put in your mouth).
